We got the tree up last night, wrapped some presents, and sent out the evite for our Xmas party! I can't wait!
I also made some carrot soup that was fantastic. I think next time I will add some potatoes and peas for some additional texture. The recipe is so easy and Nick loved it!
Carrot Soup1 onion, chopped
2 Tbsp butter
6 carrots
2 Tbsp white wine
2 cans chicken stock (I used 1 chicken, 1 veg cause that's what I had)
1/8 tsp nutmeg
1/2 tsp pepper
Salt to taste
8oz Heavy whipping cream
Sweat onions in butter. Add chopped carrots, wine, stock, and seasonings. Bring to a boil. Reduce to simmer for 30 minutes. Blend in food processor or with hand blender. Beat whipping cream til it is fluffy. Fold into soup and reheat soup until the cream has blended in fully.
Emily and I decided to do a craft trade! She's going to do a drawing of Nick's mom's dog Dermot for me to give her at Christmas and I'm going to make 2 hanging diaper bags for Abigail's nursery. Fun fun!
